WALDORF SALAD

Enjoy this easy recipe for WALDORF SALAD with apples, celery, grapes, walnuts, raisins, from SIGNS and SEASONS: An Astrology Cookbook by Amy Zerner, Monte Farber and Chef John Okas.

A traditional salad that is a fresh and delicious treat, and you can vary the ingredients to your preference. Crunchy with apples, grapes, celery and walnuts, it’s a snap to assemble.

Honeycrisp or Macoun are a good choice, but works with apples that you love. Tart -lovers may use Granny Smith; for sweet and clean, go with Red Delicious. Or, for the virtues of each, use a medley.

The apple, Fruit of the Gods, is a source of instant energy and has a spiritual mystique. If cut horizontally, it reveals the pentagram pattern, which is considered the gateway to mystical powers.

Our recipe calls for a touch of the magical spice nutmeg, the dried fruit of the tropical nutmeg tree. Said to promote fidelity and attract good fortune, nutmegs were stuffed into Egyptian mummies and carried as lucky charms in Europe.

To make this salad a meal, try adding diced, roasted chicken or turkey.

Serves 4

¼ cup mayonnaise

2 tablespoons plain yogurt

1 tablespoon lemon juice

1 tablespoon honey

¼ teaspoon nutmeg

3 apples, cored and cut into 1-inch pieces

3 stalks of celery, sliced crosswise

¾ cup halved red or green seedless grapes

¼ cup of raisins

¾ cup lightly toasted walnuts

In a small bowl, whisk together mayonnaise, yogurt, honey and lemon juice and nutmeg. In a big bowl mix the apple, celery, grapes, raisins and toasted walnuts; toss to coat with dressing. Cover; refrigerate until ready to serve, up to overnight.

Divide salad and serve each portion on a bed of mache rosettes.
